We are a small boutique winery in west Paso Robles that was established in 1994.  We have estate vineyards and source fruit from the best vineyards in west Paso Robles.  We make about 4,000 cases a year of Zinfandel, Rhone and Bordeaux based wines.

Job Description:

Grey Wolf Cellars and Vineyards is a small family run winery in west Paso Robles that produces Rhone, Bordeaux, and Zinfandel based wines that are sourced from the best vineyards in west Paso Robles.  We are looking for someone to fill our Enologist position for harvest 2018.  This would be a great position to start building connections within the Paso Robles area and get a wide range of experiences from vine to bottle.  This position does not require previous experience although an Enology concentration in the Wine & Viticulture program is preferred.  The person hired for this position would have a lab driven harvest experience centered around taking numbers of sugars, pH, and TA on all incoming fruit and samples.  This person would also be responsible for executing additions of tartaric acid, water and nutrient to ferments as well as record keeping of all harvest activities.  There would be some involvement in production when needed like processing fruit, pump

overs and punch downs but overall this would be a lab based position.   This

internship would likely start in mid to late August and run into early November.  It is a full time internship with the opportunity to earn up to 12 credits.  It would be preferred that this person is not taking any classes during the fall but there is some flexibility depending on the class schedule.  This would be a great opportunity to build your resume and learn valuable craft winemaking techniques.
