O OLIVE OIL & VINEGAR is the premier producer of California specialty olive oils and wine vinegars. O was the first in this country to crush organic citrus with olives to produce our signature line of oils. Our products are sold in gourmet, natural food and specialty stores in the United States, Canada, Japan and Europe, and Latin America.
1n 1995 Greg Hinson, co- founder and president, combined his unusual passion for citrus and healthy eating by crushing whole organic citrus with fresh California Mission olives to create an unparalleled new product category — the extra virgin citrus olive oil. These oils are neither infused nor flavored after pressing as is common in the industry.
In 1997 Hinson turned this same respect for simple natural processes to hand crafting varietal wine vinegars. O Olive Oil & Vinegar is one of the few remaining vinegar makers in this country using the old world Orleans method of natural aging in wood barrels rather than mechanically force-aging the vinegars. The difference is noticeable. In 2003 Cook’s Illustrated named our O Zinfandel Vinegar, “overall winner among gourmet brands,” touting its “distinctly earthy, fruity flavor.”

Based on experience
The Production Assistant will be responsible for assisting in all functions and phases of vinegar production. This is an excellent opportunity for someone with a passion in operations and wine making. This individual will have the chance to learn the business and gain hands on experience on the production floor.
Assists in maintaining complete and thorough records of lab analysis for each product
Assists in maintaining record and history of each batch/lot
Assists in the development of primary and secondary fermentation of all products
Under supervision of Master Vinegar Maker oversees all phases of vinegar production
Maintains all vinegar plant equipment and premises in clean, working order
Provides support in ensuring that plant and procedures meet all federal, state and local regulatory requirements
Experience in vinegar, beer, wine, or yeast fermentation is preferred.
Training in laboratory work and analysis as it pertains to vinegar or wine production
Experience with modern vinegar making processes and equipment is desirable
Training in sensory analysis of wines and vinegar
Good written and oral English communication skills.
Must be literate in various basic office programs such as Excel, PowerPoint, Word, and Outlook.
Must be a strong team player.
We would consider a student graduating in December 2018 for this role. Could be part time now and full time after graduation.
