Opolo Wines is a family-owned winery located in Paso Robles, California. We specialize in producing small-lot, high-quality wines that highlight the unique character of our region. Our vineyards are home to a variety of grapes, including Zinfandel, Cabernet Sauvignon, Syrah, and Merlot, all of which thrive in the warm days and cool nights that define Paso Robles’ climate. Opolo Wines, LP is looking for enthusiastic and motivated harvest lab interns to join our team for the 2025 harvest season. You will gain experience in the winemaking process, working alongside a talented and energetic production team.

Duties:
As a Harvest Lab Intern, you'll play a key role in the winemaking process, with hands-on tasks that include:
• Conducting key analyses (alcohol, pH, TA, VA, ML, RS, SO2, phenolics).
• Monitoring fermentation procedures and helping to implement them.
• Preparing and inoculating yeast, malolactic cultures, and other additions.
• Setting up, calibrating, and operating lab equipment—both automated analyzers and traditional wet chemistry methods.
• Preparing reagents, standards, and solutions for analysis.
• Collecting and analyzing samples from tanks, barrels,and bins.
• Monitoring alcoholic and malolactic fermentations.
• Performing lab trials and recording data in Excel.

What We’re Looking For:
We’re seeking a motivated, detail-oriented team player who thrives in a fast-paced environment. While lab experience is a plus, we value a passion for learning and growth in winemaking. Ideal candidates should be flexible with working long hours (including weekends, nights, and holidays), organized, and have reliable transportation and a clean driving record. During peak harvest:60 hours per week(10-12 hour days and one weekend shift).

Physical Requirements:
This position requires candidates to be physically fit, capable of lifting up to 50 lbs, and comfortable with extended periods of walking, standing, and climbing ladders. Adherence to all safety protocols is essential.
